[Fall Bucket List] Fall Baking

I don't know what it is, but the Fall (and Winter) months make me want to bake every day. No joke. Thankfully I don't have the time for that or I would need to go on a major diet come January 1st.

As a working mom, I don't have much time to bake during the week. We're out the door at 7am every morning and then home at 6pm every night. We have dinner and baths (Mason) and then Mason's in bed by 8pm. And at 8pm? I definitely don't have the energy for baking. So the weekends are it for me. But even on the weekends, I don't usually have tons of time to bake so I have to make the most of my time.

So what does that mean?

Pre-packaged goodies to the rescue!


My guiltiest pleasure during the holidays is this pumpkin muffin/bread mix from Trader Joe's.
(Seriously, it is a guilty pleasure because I accidentally checked out the calorie count in this baby this weekend when I made this bread...oops! Don't make the same mistake that I did. Just make it and enjoy the deliciousness without knowing how "good" it is for you!)

And it seriously is just as easy as it sounds to make.


Preheat the oven.

Combine eggs, oil, and water in a bowl.


Add the mix and stir. I don't even think it took the 1-2 minutes that they say you need before the batter was smooth.

Now one thing they don't tell you is to add chocolate chips. But... ADD CHOCOLATE CHIPS. Oh my goodness. It makes it so much better! I made this mix as muffins last time and let me tell you, I liked the ones that I added chocolate chips to WAY more than the ones without.


Oh and don't let this picture fool you. I tried to let Mason help and about 3 seconds after I snapped this picture, he flung the batter over the edge and onto the counter. And then tried to stick his hand in the batter. I tried to let him help with the chocolate chips and he tried to eat them out from the batter and I freaked out because there was raw egg and that was the end of the helping. All 1.2 minutes of it.

I poured the batter into the pan and popped it in the oven. I checked on the bread after 55 minutes but it was still un-cooked in the middle so I aded 5 more minutes and it was perfect.




I let it cool for 15-30 minutes and then sliced it.



Perfection.

I had plans to freeze it and save it for quick, on the go breakfasts for the week but it looked and smelled too good not to have some right away. It was perfect. Still even a little warm.

If you have a Trader Joe's near by and like pumpkin, I highly recommend this mix! Yum.

  3. There is nothing better than a simple box of dessert mix. Add a couple items from the fridge, bake and BAM! You have yourself a tasty treat!

  6. I love that Mason helped with the baking! Baking has become one of our favorite things to do together. Something about the pouring, mixing stirring…
    Pumpkin bread is SO good. I've never tried TJ's mix, but might have to give it a shot (as well as pick up more cookie butter ice cream).

  7. Why does fall make us want to bake?! I think I just want to turn the oven on to heat up the kitchen, lol. Oh I wish we had a Trader Joes. Maybe someday Joplin will be complete, lol.
