St. Patrick's Day

Happy (belated) St. Patrick's Day!

I hope everyone had a great day celebrating and wearing green! I tried to make St. Patrick's Day extra special this year since Mason is getting older and more aware of what is going on. However, I'm sure he had no idea it was a holiday and just though I was some crazy lady serving him the same colored food all day. Oh well, one day he will look back on these pictures and thank me for all the effort I put in, right?
A mom can dream...

Anyway, on to the fun! Since St. Patty's Day fell on a Monday and I knew I would have to work and Mason would be at daycare, I wanted to make Sunday extra special and celebrate the holiday early; however, the party actually got started even earlier because after dinner on Saturday night, I had this really great idea to get shamrock shakes on the way home so we stopped for a little dessert at McDonald's. I was especially excited since I've never actually had a shamrock shake! The horror, I know! They were delicious and we will definitely be back for more next year!

I had plans for Seth to make green chocolate chip pancakes in the morning for breakfast before Gymboree on Sunday. I even set my alarm to wake up early enough where I knew we could for sure have our festive breakfast, but who was I kidding? I don't need an alarm clock! I have a toddler. So, needless to say, we were up in plenty of time.

Mason is often SUPER hungry when he wakes up in the morning and starts crying or whining for food the second we get downstairs. I swear it's like the kid never eats. So, I gave he some of our leftover Lucky Charms cereal to hold him over until the pancakes were ready. He was quite excited about the cereal and devoured it before I could even blink. Clearly someone likes cereal with marshmallows in it. Though I can't say I blame him.

Now I had no particular recipe for these pancakes, we just made pancakes like normal, added a couple drops of green food coloring, and added the chocolate chips like normal and voila!

I thought they were delicious and festive so we will definitely be continuing on this tradition next year.

We headed off to Gymboree wearing our green shirts... and were definitely the only ones dressed up. Seriously? Nobody dresses up their kids for holidays?! Or maybe it's just because it was a day early? I have no idea. Either way, we had fun!

For dinner, we had plans to go to my brother-in-law's mom's house so I knew I wanted to incorporate The Mile High Mom's festive food ideas from the Lucky Recipe Link Up into our lunch so after Gymboree, we made a pitstop by the grocery store on the way home. I grabbed some sushi lunch for Seth and I and some fruits for Mason.

A rainbow of fruit including strawberries, cantaloupe, pineapple, kiwi, blueberries, and grapes as well as edamame and avocado (and dinosaur chicken nuggets because he couldn't just eat fruit for lunch) for Mason.

And sushi, avocado, edamame, and a rainbow of fruits for each of us too.

After lunch, Mason took a nap, I went grocery shopping and then made some green shamrock rice krispy treats for the St. Patty's Day party at daycare. They didn't turn out as green as I had expected but I didn't really use a recipe besides what was on the marshmallow bag...which didn't include making them green.
Not quite Pinterest worthy, but still tasty nonetheless!

Mason woke up and we headed over to our brother-in-law's parents house. I didn't take any pictures at dinner, but there we had some delicious corn beef, cabbage, bread, potatoes, and carrots for dinner and an amazing grasshopper-like ice cream pie for dessert. The whole thing was delicious and I look forward to St. Patty's Day every year just for that meal!

I'm so embarrassed I didn't actually take a picture of Mason on St. Patty's Day like I did last year. Though I'm sure if I had tried to get a posed picture, I would have been met with a toddler running away...or trying to eat my sign... or chucking the sign in the trash...or the toilet since that seems to be his new obsession.
Lucky me (pun intended).
So instead I leave you with this gem from last year and a picture that Luz sent me from daycare today.

Oh and I do have a picture of the "shamrock" pizza we had for dinner on actual St. Patrick's Day! Go figure, a picture of the food and not the kid.

Hope everyone had a Happy St. Patty's Day! We had a great time celebrating ours (even if it was a little early!) and will definitely be making these festive treats again next year... as well as any other fun Pinterest recipes I can convince Seth to make... kidding.
Kind of.
Love you husband :)

  1. Fun!! That's more than I got done for St. Pat's this year.. We had homemade guacamole before supper, that counts right (GREEN)?! :) Haha I've never had a shamrock shake either, what is it exactly? Mint? Looks like you guys had fun.

  2. So cute! We dressed Noah in green all weekend! I went to a class on Monday and was shocked every kid wasn't in a St Pattys shirt! I went for my second shamrock shake (of this year) today but their milkshake machine was broken! So upset!

  3. How fun was your St. Patty's Day! I'm so jealous of all your festive food! Those pancakes look so good and that sushi has got me craving it bad now! I love Mason's little man shot from last year compared to this years, that picture is too cute!

    1. Thank you! It was actually pretty easy! I just bought a fruit salad mix from the grocery store and they had done all the hard work for me!
