[Countdown to Halloween] Baking with Pumpkin!

With it finally being Fall and Halloween rapidly approaching, I knew I wanted to make some sort of pumpkin recipe before Halloween came (and went). I've been pinning pumpkin recipes like crazy and I had hoped to try a new recipe this year. So, I hopped on Pinterest to see what my choices were and tried to pick just one to try.

I first wanted to make these pumpkin donuts, but I don't have a donut pan, so those were out.

Then I wanted to make these pumpkin spice banana chocolate chip blondies, but I didn't have pumpkin spice peanut butter (nor did I even know they made that!), so those were out.

Then I thought maybe I'd try some pumpkin chocolate chip cookies but I didn't have molasses, so those were out. And I went to Target to buy some cloves for these cookies, but it was literally like $4+ for a SMALL jar for me to use 1/8 of a teaspoon and there was no way I was doing that, so those were out too.

BUT I wasn't going to give up! So while I was at Target, I literally grabbed a box mix of pumpkin muffin mix and called it a day. It might be simple and out of a box, but they turned out amazing, so I'm not complaining.


Turns out, I was so excited about eating them that I... completely forgot to take any pictures of them. #bloggerfail. You'll just have to take my word for the fact that these box mix pumpkin chocolate chip muffins were amazing. So amazing in fact, that Mason practically grabbed mine out of my hand and scarfed it down himself.

On the plus side, I did take some super cute pictures of my little helper helping me mix the ingredients and put the batter into the muffin liners!




We had some leftover Paw Patrol muffin liners from his birthday (yep, three months ago) and Mason was so excited to use them for our muffins. I let him help with almost everything (he LOVES to help me bake) until things got a little too messy (read: right after this last picture). I really had to rein in my OCD because I felt like the second he got that scooper in his hand, I was doomed. I let him do a few scoops and then I (nicely) took it away from him and let him go back to playing.

Regardless of how fancy (or non-fancy) my muffins were, they were delicious and I got to have some one on one time with my little helper. And to me, that's all that matters!

  1. I cracked up that you said no to many recipes before getting to the last one. I do the same thing. Ha ha! Those sound yummy! We've made pumpkin muffins a few times this season using Stephanie's recipe and man are they good.

  2. I drive Chris crazy with getting ingredients that I only use once. I think I need to follow your elimination process! And I made pumpkin muffins from a mix too this year! I used pillsbury and they were delicious too :)

  3. I love that you showed how you narrowed down the choices. I also love that you forgot to take a photo. That is awesome friend. They muse have smelt amazing and who could blame you for diving right on in.

  4. He is too cute in the kitchen. I'mean hoping one day my Mase will want to bake with me...whenever we get our oven fix. Why hasn't anyone invented single serve spices yet?

  6. Baking with kids is always a tug of war between letting them have fun but not letting them get batter in every corner of the kitchen. Looks like you succeeded ;) Now I want some muffins!

  7. Easy pumpkin recipe for the win! I like those kind when I'm letting Marcus help in the kitchen. Just a few relatively easy steps for him to help with, and it doesn't take so long to prep. And, that means the goodies are done that much faster! I'm totally with you when it comes to messes. Once the scooper comes out I try and redirect Marcus to something far, far away from the kitchen!

  9. You should try a non molasses pumpkin cookie recipe! I hate molasses myself, and my gosh the smell. ick. So I'd avoid it! The ones we make don't call for molasses from Sally's baking addiction. I'd link but I'm lazy. And I love when a quick box mix is tasty! No need to do all the extra work.

  10. Your helper is so cute. And you can buy spices by the...whatever measurement you want at Sprouts! That's where I buy my clove and such for my Thanksgiving recipes. :)

  11. Awe, what a darling helper :) I just picked up a box of muffin mix from TJs that I gotta make! Also, Ill send you the pumpkin muffin donut recipe I used last year- no donut pan needed and theyre really good!

  12. Sometimes the ingredients just get daunting! I've made pumpkin muffins before from a spice cake mix and a can of pumpkin. That's it. So easy and so good!

  13. I do the same thing. Pin things that look great without looking at the ingredients and when I go to pull one up I'm like, "Nah, that's never going to happen". I have so many pumpkin things pinned, but always go back to this bread. It's simple and has basic ingredients. It makes two loaves too and I always freeze the second one in halves.
